Cucumber and Tomato Bowtie Pasta Salad Recipe
With school back in session, we've been trying to come up with some creative school lunch ideas!
This Cucumber and Tomato Bowtie Pasta Salad happens to be my daughter's favorite, so we sent it in her lunchbox to school last week.
It's quick to make, fresh and delicious! She's not much of a meat eater, so the majority of her lunches are packed full of veggies.
Her usual is a lettuce salad with hard boiled egg whites, tomatoes and red wine vinaigrette.
We got this cute little salad dressing container from the dressing aisle at Walmart. So perfect for lunches.
We also love making this salad for BBQ's, or picnics!
It's always a hit and it's easy to double or triple the batch for larger groups! We've been using out garden fresh tomatoes and cucumbers, which makes it even better.

Cucumber and Tomato Bowtie Pasta Salad

Ingredients (6 side servings)
- 8 ounces bowtie pasta
- 1 cup cucumbers, peeled and diced
- 4 campari tomatoes, diced
- 1/2 cup Italian dressing
- freshly cracked black pepper
Instructions
Cook pasta according to package directions. Rinse with cold water and drain.
Combine all ingredients in a large bowl. Refrigerate or serve immediately.
