Confession... I'm a huge fan of fried fish.
Minnesota is known for it's 10,000+ lakes and with all those lakes, comes some pretty amazing fish. I spent a weekend on the boat with my brother at the cabin this summer and enjoyed every minute of it.
I'm pretty sure it was totally laugh-worthy with me singing "Hey fishy fishy" every 5 minutes when I got another bite on the line.
While this recipe doesn't use fresh fish from the lake, it's still quite amazing!
Tilapia is our go-to fish when we don't have lake fish available. It's reasonable and very easy to cook with. You can use any white fish you prefer with this recipe and it will still turn out perfect every time.

Easy Fried Fish Sandwich
Yield: 4 sandwiches
ingredients:
- 1/3 cup olive oil
- 1 cup panko breadcrumbs
- 2 tablespoons flour
- 1 tablespoon lemon pepper seasoning
- 1 egg
- 4 tilapia fillets
- Buns
instructions:
- Heat the oil in a skillet to medium high heat.
- In a shallow dish, combine panko, flour and lemon pepper.
- Whisk the egg in a separate dish.
- Once oil is fully heated, dip the fish in the egg mixture, then coat the fish with the panko mixture and add to frying pan. Cook for 3 minutes on the first side, then flip and cook an additional 2-3 minutes until golden brown. Transfer to a paper towel lined plate.
- Assemble sandwiches and serve immediately.
