Slow Cooker Four Bean Chili Recipe
Hi everyone! Sheena's sister Shannon here from In Blurred Focus with my husband's four bean chili recipe!!! It's fall here in Minnesota, so it was a great day to make a slow cooker full of this amazing chili! I have to admit, I never liked chili before I tried my husband's recipe. There is just something about the flavor of this recipe, maybe the spicy V-8 juice as the base? I'm not sure, but it's pretty darn amazing and I can't wait for you all to try it!
We love eating this over steamed rice, with sour cream, shredded cheddar and tortilla chips! We also don't add salt or pepper to the recipe because I don't like much ground black pepper and my husband doesn't like much salt, so feel free to add before hand if you'd like.
Slow Cooker Four Bean Chili (click here to print)
What you need:
- 1 1/2 pounds of ground beef
- 2 - 16 ounce cans great northern beans
- 2 - 16 ounce cans butter beans
- 1 - 16 ounce can light kidney beans
- 1 - 16 ounce can pinto beans
- 1 - 16 ounce can diced tomatoes
- 1 - 24 ounce jar of mild salsa
- 1 red pepper
- 1 onion
- 2 1/2 teaspoons chili powder
- 1 - 46 ounce container of spicy V-8 juice
Directions:
Brown the ground beef, drain and add to slow cooker. Drain the beans and add to slow cooker. Add diced tomatoes and salsa to slow cooker. Chop the red pepper and onion and add to slow cooker. Add chili powder to slow cooker. Pour V-8 juice over ingredients in slow cooker and mix all ingredients together. Cook on high for four hours and on low for two hours, stirring intermittently as to avoid the bottom burning. Serve, eat and enjoy!
