Chicken Caprese Flatbread Pizza Recipe

Flatbread recipes, most recently... Pizzas!
My daughter happens to hate pizza, so using flatbreads are a perfect solution for a quick and delicious personal pizza.
I love to create and experiment with new flavor and ingredient combos and I think this new one is at the top of my favorites list!
Caprese anything is always a go for me. Remember the Caprese Fries I made a few weeks ago? This recipe is just as good!
With the herb garlic deli chicken added in, the pizza turned out to be absolutely wonderful.
I love when my local grocery store, Coborn's has new and different deli meats on sale.
This was the first time ever trying the herb garlic chicken, and it was definitely something I'd buy again. Just delicious!
It also is thin enough to warm through when broiling the pizza, which is needed with the quick cooking time!
I used the shredded mozzarella I already had on hand, but fresh mozzarella would be fabulous too!
Any small tomato would work great. Our favorite are the baby heirlooms I used in the recipe, we pretty much have them on hand at all times.
They are about the closest thing you can get to garden tomatoes and burst with flavor when broiled on the pizza.

Chicken Caprese Flatbread Pizza
by Ingredients (1 flatbread pizza)
- 1 pita flatbread
- 1/2 cup shredded mozzarella
- 1/3 cup herb garlic deli chicken lunchmeat, torn into pieces
- 2-3 baby heirloom tomatoes, sliced
- 1-2 fresh basil leaves, torn into small pieces
- balsamic reduction, optional
Instructions
Preheat oven broiler.
Layer the cheese, chicken, and tomatoes. Broil for 4-5 minutes until cheese melts and edges of the pita are browned. Watch closely to prevent burning.
Remove from oven. Sprinkle with basil, and drizzle with balsamic reduction if using. Cut in triangles and serve!
