It's finally hoodie weather, which this Minnesota girl loves! I'm all about cool temps, leaves falling, comfort and game day foods and fresh apple cider.
Today's recipe is perfect for any game day celebration! It's a quick and easy appetizer, and the flavors are just too good.
I love the combo of the chicken and cheddar along with the diced red onion and cilantro! The onion and cilantro bring the taquitos a fresh pop of flavor with the rich barbecue sauce.
These taquitos are baked and lightly brushed with an olive oil and salt combo. If you double or triple the batch, you can easily feed a crowd.
I shared these with some taste testers the day I made them, and they were a hit with everyone!

Baked Cheddar and Barbecue Chicken Taquitos
Yield: 8 taquitos
ingredients:
- 2 cups cooked chicken, shredded
- 2 cups shredded sharp cheddar cheese
- 1/4 cup fresh cilantro, chopped
- 1/4 cup red onion, finely diced
- 1/2 cup barbecue sauce
- 6 medium size flour tortillas
- 1 tablespoon olive oil
- 1-2 pinch of salt
instructions:
- Preheat oven to 350 degrees.
- In a bowl, combine chicken, cheese, cilantro, onion and barbecue sauce.
- Spoon approximately 1/4 cup of chicken and cheese mixture down the center of each tortilla. Roll the tortilla tightly around the filling and place on a greased baking sheet seam side down.
- In a small bowl, combine the olive oil and salt. Brush the top of each taquito with olive oil.
- Bake for 15-20 minutes until edges are browned and crispy.
- Serve with ranch or barbecue sauce for dipping.
