Stuffed Shells Recipe
This recipe is another favorite of mine that my Mom used to make! It has great flavor and tastes great leftover! I made a few changes but thanks Mom for the great recipe!
1 onion, chopped
6 cloves garlic, minced
3/4 lb hamburger
1/4 lb pork sausage (you can use different amounts of each meat, this is what I had on hand)
1 Tbsp Italian seasoning
1- 8 oz pkg mozzarella cheese plus an additional 4 oz for topping
1/2 carton sliced white mushrooms
2-15 oz cans tomato sauce
1- 14.5 oz can petite diced tomatoes
1 quart tomato juice (4 cups)
1 Tbsp sugar
1- 12 oz pkg jumbo shells, cooked
salt and pepper to taste
Cook shells according to package directions. Meanwhile, in a pan saute half the onion, half the garlic, hamburger, sausage, Italian seasoning and salt and pepper. Add mushrooms and when cooked through add mozzarella. Melt the cheese and remove from heat.
In a separate pan saute the rest of the onions and garlic until tender. Add tomato sauce, diced tomatoes, tomato juice, sugar and salt and pepper. Simmer on low. Pre-heat oven to 350 degrees.
Add 1 cup sauce to the meat mixture.
Start stuffing cooked shells with meat and cheese mixture. You will need 1- 9x13 pan and an additional pan size depending on how much meat and noodles you have left. Cover the bottom of each pan with a small amount of sauce.
Cover with remaining sauce and last 4 oz of mozzarella cheese. Put in the 350 degree oven and bake for 45 minutes or until cheese is browned on top.
Serve with garlic bread or bread sticks! Enjoy!
