Ground Beef Chili with Bacon Recipe
Today was a perfect fall Sunday to make some nice, hot Chili! The recipe always changes a little bit each time I make it, depending on what I have. This is today's variation!
What you need:
1 lb lean ground beef
1/4 lb pre-cooked bacon, cut into small pieces
1 onion, chopped
4 cloves of garlic, minced
1/2 red pepper, diced
2 tsp cumin
1 tsp cajun seasoning
1- 14.5 oz can diced tomatoes
1- 15 oz can dark red kidney beans
1- 15 oz can black beans, rinced
1- 15 oz can navy beans
1- 15 oz can chili beans
46 oz bottle tomato juice
3 Tbsp. chili powder
salt & pepper
Shredded Cheddar Cheese
Add ground beef, bacon, onion, garlic, red pepper, 1 tsp cumin, cajun seasoning, salt and pepper to a large stock pot. Cook over medium high heat until ground beef is fully cooked.
Add diced tomatoes, all of the beans, tomato juice, chili powder and 1 tsp. cumin. Simmer for a 30-45 minutes. Top with shredded cheddar.
