Lemon and Asparagus Orzo Recipe
Hi everyone! I hope your week is going great!
It's been a relaxing week for us so far, and I'm SO looking forward to Friday. My brother, sister and sister in law go garage saleing together the first Friday of May every year and we always find some awesome deals.
I'm a huge garage sale junkie and go all the time in the spring and summer, but it's so much more fun with family! Hopefully I find some great blogging dishes and clothes for my daughter!
I just love simple side dish recipes.
This orzo is very simple and so full of flavor! It makes a pretty big batch, so if there's only a couple of you, I would cut the recipe in half.
We had tons of leftovers.
If you don't like asparagus, try adding some different veggies, or you could skip the veggies all together! Enjoy!!
Lemon and Asparagus Orzo
by Ingredients
- 3 cups water
- 1 1/2 cups orzo
- 1 cup fresh asparagus, cut into bite sized pieces
- 2 tablespoons butter
- 2 tablespoons fresh lemon juice
- 2 teaspoons grated lemon zest
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt
- black pepper, as desired
Instructions
In a large saucepan over high heat, bring the water to a boil. Add orzo, reduce heat to medium, and cook until liquid is absorbed. Within the last 3 minutes of cooking the orzo, stir in the asparagus.
When the orzo is cooked though, add butter, lemon juice, lemon zest, parsley and black pepper. Serve immediately!
