Not sure about you, but breakfast is my absolute favorite meal!
My daughter is a HUGE pancake fan and when she was recovering from the flu last weekend, she had one request. Could I make pancakes for her?
Since we were stuck in the house with no pancake mix, I had to find a recipe to make some pancakes from scratch for her!
This recipe came from a cookbook that's been on my bookshelf for awhile. There are SO many great recipes in it.
It's called Always on Sunday by Eleanor Ostman. It's a local, Minnesota cookbook with recipes from all over the place! LOVE!
This recipe is just as easy to prepare as the boxed stuff and even better... you know what ingredients are in it!
Better for you and cheaper too! It's a win-win all around!! I can't wait to make these again and try adding in some other ingredients!

What's in homemade pancakes?
- Milk: cow's milk is a great source of calcium, vitamin D, potassium and it's a complete protein source too!
- All purpose flour: It's a combination of hard and soft wheats. Bleached flour provides a softer texture. It's versatile and you can bake most anything with it!
- Granulated sugar: Also known as white sugar, table sugar or regular sugar. It's grainy, common and used in many types of recipes.
- Baking powder: It's a dry leavening agent, with a shelf life about 9-12 months. Baking powder is used to increase the volume and lighten the texture of baked goods by causing bubbles in a wet mixture. Baking powder is usually made with a combination of baking soda, cream of tartar and cornstarch.

Easy Homemade From Scratch Pancakes
Yield: 12 small pancakes
ingredients:
- 1 cup milk
- 2 tablespoons vegetable oil
- 1 egg
- 1 cup all purpose flour
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 2 teaspoons baking powder
instructions:
- In a bowl, whisk together the milk, oil and egg.
- Combine the dry ingredients and add to the egg mixture. Whisk until the batter is smooth.
- Grease a skillet or griddle and heat over medium.
- Scoop the batter onto the skillet using 1/4 cup for each pancake.
- Heat until pancake bubbles and flip, about 2-3 minutes for each side, until lightly golden brown.
