I got a fantastic deal on some blueberries at Trader Joe's a couple weeks ago and needed to find a recipe to use them in.
I just love how cheap blueberries are this time of year. I've even had some the size of a quarter, and they were SO sweet and juicy. I could eat a whole package in one sitting, no lie!
After browsing through my cookbooks for awhile, I stumbled on this berry pie bar recipe and I knew it would be the perfect one to try! I just love how these bars turned out.
They have just enough sweetness and the filling goes great with the crust. These would be a great dessert for picnics or BBQ's in the summer, or for dinner and family gatherings during the winter. We even put them in my daughter's lunchbox for school.
You could also substitute any berry depending on what you have, or what's on sale, or if blueberries aren't your thing.
Pie is defintely my favorite dessert. I'm not much of a baker through, so these bars are a perfect substitute for people like me.

What is in blueberry pie bars?
- All purpose flour: It's a combination of hard and soft wheats. Bleached flour provides a softer texture. It's versatile and you can bake most anything with it!
- Granulated sugar: Also known as white sugar, table sugar or regular sugar. It's grainy, common and used in many types of recipes.
- Sour cream: This fermented cream is made from regular cream and becomes thick and sour from lactic acid bacteria. This can be used in sweet and savory recipes and if you're interested in making it homemade try this recipe! It's a great source of calcium.
- Fresh blueberries: Eating this fruit daily can improve heart health. They are low in calories, packed full of antioxidants and should be refrigerated after purchasing them.

This recipe is ready in these steps:
- Preheat the oven
- Grease a glass baking dish
- In a bowl, combine flour, sugar, salt and cubed butter with an electric mixer
- Set aside 3/4 cup of the mixture for the topping
- Press the rest of the crust mixture into the bottom of the glass baking dish
- Bake for until golden brown
- Remove from the oven and set aside
- Whisk the eggs in a bowl
- Add sugar, sour cream, flour and salt
- Gently stir in the blueberries
- Spoon the mixture over the crust
- Sprinkle the reserved crust over the filling
- Bake and cool before serving

Blueberry Pie Bars
Yield: 12 bars
ingredients:
- Crust and Topping:
- 1 1/2 cups all purpose flour
- 3/4 cups sugar
- pinch of salt
- 1 1/2 sticks chilled butter, cubed
- Filling:
- 2 large eggs
- 1 cup sugar
- 1/2 cup sour cream
- 1/3 cup all purpose flour
- pinch of salt
- 3 cups fresh blueberries
instructions:
- Crust and Topping:
- Preheat the oven to 350 degrees.
- Grease a 7x11 glass baking dish. In a large bowl, combine flour, sugar, salt and cubed butter with an electric mixer until you reach a crumbly consistency.
- Set aside 3/4 cup of the mixture for the topping, and press the rest of the crust mixture into the bottom of the glass baking dish.
- Bake for 15 minutes or until golden brown. Remove from the oven and set aside while you make the filling.
- Filling:
- Whisk the eggs in a large bowl. Add sugar, sour cream, flour & salt.
- Gently stir in the blueberries. Spoon the mixture evenly over the crust. Sprinkle the reserved crust evenly over the filling.
- Bake for 45-55 minutes or until the top is lightly browned. Cool for 1 hour before serving.

- Carol- Good recipe but I did vary it because of diabetic family members, and frozen raspberries as well as blueberries. Added coconut as I'd been wanting something with it. Lined my pan with parchment paper. Lifted out well and cuts neatly. Quick and easy great Sunday night dessert.
