Hey everyone!! I hope you had a great weekend! 

My weekend was fantastic. My younger sister, daughter and I traveled to Mankato to visit my older sister and her family. 

We ate at a couple great restaurants, went to the Pioneer Power Tractor Show and Antique Flea Market in Le Sueur, and cooked some amazing food! 

The flea market is always a yearly adventure for us sisters. My Dad is there as a vendor, so we go visit him, then hunt for all the stuff we don't need.

I usually pick up some vintage Pyrex for my collection and fun props and dishes for recipe photos.

You can find different flea markets all over Minnesota! My sister, Shantel and I go to one near Saint Cloud often. She repurposes old furniture and decor and is always on the hunt for her next project.

One of the recipes my brother-in-law prepared this weekend, were these amazing Cowboy Mashed Potatoes! 

I've never had mashed potatoes quite like these before!

I love all the veggies mixed in. Total comfort food! Top with a little butter and salt and pepper for the perfect side.

They would also be perfect for the holidays. I can see them as a side for Thanksgiving, Christmas or Easter. 

I'd still love gravy over top even with the cheese and veggies mixed in. Or, make two different kinds of potatoes. The basic mashed potato and these tasty potatoes.

Double the recipe for a crowd or if you like leftovers.

The leftovers would be great made into mashed potato cakes. I just love how crispy the potatoes are after they're fried in some butter. We like them for breakfast alongside some eggs, or as a side for dinner.

This recipe is just too easy to make

• Place potatoes, jalapeno, carrots and garlic cloves into a large pot
• Cover with water, salt then cover
• Cook until potatoes are tender, drain
• Pour potatoes into a large bowl
• Mash with corn, butter and cream
• Stir in cheese, salt and pepper
• Serve!

Cowboy Mashed Potatoes

Yield: 6 servings

ingredients:

• 1 pound red potatoes, peeled and quartered
• 1 pound Yukon Gold potatoes, peeled and quartered
• 1/2 jalapeno pepper, remove rib and seeds for less heat, sliced
•  6 ounces carrots, peeled and julienned into 1 inch pieces
• 3 cloves garlic
• 5 ounces frozen white and yellow corn, thawed
• 1/4 cup butter
• 3 tablespoons heavy cream
• 1/2 cup shredded cheddar cheese
• 1 1/4 teaspoon salt, divided
• 1/8 teaspoon black pepper

instructions:

1. Place potatoes, jalapeno, carrots and garlic cloves into a large pot. Add 1/2 teaspoon salt.
2. Cover with water, and bring to a boil over high heat. Cover and cook 15-20 minutes or until potatoes are tender. Drain water from the pot.
3. Pour potatoes into a large bowl.
4. Stir in the corn, butter and cream, mash with a potato masher until you reach desired consistency. 
5. Mix in the cheese, 3/4 teaspoon salt and pepper. Serve.
