After traveling to many places in the south and tasting some amazing southern soul food, I couldn't wait to come home and recreate some of those wonderful flavors I've tried over the years.
Let me introduce you to my greens! This recipe always turns out to be SO delicious. I've made it quite a few times through the years and it seems to taste better and better every time.
The smoked turkey leg adds the most amazing flavor to the greens, along with the garlic, onion and seasonings. I usually grab the biggest smoked turkey leg I can find at the grocery store because I love the flavor it adds SO much.
It's worth the splurge and this recipe makes a good sized batch. After serving a family of four, we usually have some leftover.

This recipe would also be great with kale or mustard greens, in addition or instead of the collard or turnip greens that I usually use.
You can also use smoked turkey wings, smoked ham hocks, bacon, ham shanks or a leftover ham bone instead of the turkey leg.

I feel so blessed that I have access to a community garden during the summer months and can pick fresh greens anytime. They grow great in Minnesota and produce enough for the whole neighborhood, I swear!

Collard or Turnip Greens with Smoked Turkey Leg
Yield: 8 servings
ingredients:
- 1 smoked turkey leg
- 1 pound collard or turnip greens, or a mixture of both rinsed, and chopped into bite sized pieces
- 1 medium onion, diced
- 5 cloves garlic, minced
- 1 teaspoon crushed chili pepper flakes
- 1 1/2 teaspoons salt
- 1 tablespoon apple cider vinegar
- water
instructions:
- Combine all ingredients except the turkey leg in a large stock pot.
- Add enough water to cover the greens. Add the turkey leg.
- Bring to a boil over medium high heat. Reduce heat to low, cover and simmer for 2-3 hours.
- Remove the turkey leg during cooking, remove meat, cut into bite sized pieces, and add back to the greens for the remainder of cooking time.
