Sheet Pan Garlic Honey Herb Pork Chops and Vegetables Recipe

If your family is as busy as ours, then you don't have much time in the kitchen during the week to prepare a fresh, healthy and mouthwatering dinner.
Our family is always on the run to choir practice, youth groups, math club and the local YMCA during the week.
A lot of my cooking is done on Sunday, and we sometimes have to rely on leftovers or take-out to make it through the busier evenings on weekdays.
Today's recipe is defintely one that you can make time for.
It's easy and super delicious. After prep time, it only takes 30 minutes to bake and that's with the oven doing all the work for you!
What's great about sheet pan meals is that I don't have to stand at the stove constantly stirring and watching. It frees up some time to fold laundry, help my daughter with her homework or just relax on the couch for a few minutes.
Not only is this recipe perfect for when you don't have much time during the week, but it's also wonderful for entertaining when you have family and friends visiting on the weekend!
I stopped by my local Walmart the other evening and shopped for all the ingredients to prepare this dinner recipe.
After browsing through the meat and poultry section, I decided to try out the Smithfield All Natural Boneless Pork Chops for my sheet pan meal.

All of that flavor is what makes this dish shine. The pork and veggies absorb all that garlic, honey and fresh herb goodness!
It takes just a few minutes to chop up and mix together the marinade ingredients, and the end result is SO much better than any marinade you can buy in the store. I can't get over how good the flavor was!
But, everything is better with garlic, right?
What I love most about this meal? It's healthy, flavorful and packed full of delicious vegetables!
You can use pretty much any veggies and fresh herbs you have on hand.
Rosemary is my second favorite herb after basil. Either would be wonderful with the parsley in this recipe.
If you choose to use Smithfield All Natural Bone-In Pork Chops, just make sure to add them to the pan right away when the veggies go in the oven.
Brown sugar is also a great substitute for the honey in this meal. Easy peasy and totally customizable!
Another great thing about this recipe, if you have leftover pork chops or vegetables, they can be re-purposed into another timesaver meal, especially lunch!
We love using leftover pork in pineapple fried rice, cheesy jalapeno quesadillas, veggie couscous, creamy burritos and more!

Sheet Pan Garlic Honey Herb Pork Chops and Vegetables

Ingredients (Serves 2-3)
- Sauce:
- 1/4 cup honey
- 1/4 cup freshly squeezed lemon juice
- 3 tablespoons olive oil
- 2 teaspoons soy sauce
- 3 cloves garlic, minced
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon paprika
- a pinch of salt and pepper
- 1 small onion, sliced into wedges
- 1 medium red potato, peeled and sliced into bite sized pieces
- 2 medium carrots, peeled and sliced into bite sized pieces
- 4 ounces white mushrooms, halved
- 1 small zucchini, cut into bite sized pieces
- 1 pound Smithfield All Natural Boneless Pork Chops
Instructions
Preheat the oven to 450 degrees.
In a medium sized bowl, whisk together the honey, lemon juice, olive oil, soy sauce, garlic, basil, parsley, paprika, salt and pepper.
Add each veggie to the sauce and stir to coat. Remove and add to the sheet pan in a single layer leaving room for the pork chops. Place sheet pan in the oven and bake for 10 minutes.
Meanwhile, add the pork chops to the sauce and let marinade for the 10 minutes while the veggies are cooking.
Remove the veggies from the oven after 10 minutes, then add the pork chops to the sheet pan and pour remaining sauce over top.
Bake for another 20 minutes until pork chops are cooked through and veggies are tender. Remove from oven and serve.
