Thanksgiving is less than one month away! Where does the time go?
I will be starting my 4th month in my Americorps VISTA service in November and I really love it so far! We've been super busy planning new programs and activities and I really love being out in the community.
In addition to that, we've been busy with Girl Scouts, essential oil classes for my Young Living business, hanging out with family and friends and so much more!
It's been a busy fall so far, but I wouldn't have it any other way. I'm totally loving my life right now.
Today's recipe is great for using leftovers from Thanksgiving.
I absolutely love homemade turkey soup and it's especially good with the leftover stuffing added in. The stuffing is just like dumplings and add a delicious taste and texture to the soup.
My Mom makes the best stuffing. I haven't had the chance to blog it yet, but it's full of sage and onion goodness and it's a favorite amongst family and friends. I look forward to eating it at Thanksgiving and Christmas!

Thanksgiving is one of my favorite holidays!
We just sit back, eat, drink wine, play games and chat. We don't get that time together as a family often and it's just so relaxing and fun! The food is always amazing and because we always make SO much, we always have a ton leftover!
I'm huge on turning leftovers into new and different meals, and this recipe does just that.
We also love using leftover turkey with some of the chicken recipes here on the blog. Just switch the chicken out with the turkey and make as instructed! That goes for this soup as well too, use chicken instead of turkey!

Roasted Turkey and Stuffing Noodle Soup
Yield: 8 servings
ingredients:
- 1 tablespoon butter
- 1 cup celery, sliced
- 1 cup carrots, sliced
- 1 medium onion, diced
- 14 cups turkey or chicken broth
- 3 cups medium egg noodles
- 2 cups cooked turkey or chicken, chopped
- 1/1 2 cups leftover stuffing or dressing
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
instructions:
- In a large soup pot, melt butter over medium heat. Add the celery, carrots and onions and saute for 5 minutes.
- Add the broth, increase the heat to medium high. Bring to a boil, and boil for 5-7 minutes. Add the egg noodles and cook for another 5 minutes.
- Add the turkey, stuffing, parsley, salt and pepper and cook for another 2-3 minutes. Remove from heat, cool slightly and serve.
