Tomato Basil Pretzel Roll Bruschetta Recipe
Sorry it's been awhile since I've shared a new recipe with you! We had our housewarming BBQ last weekend, and I also did some volunteering for a Habitat anniversary celebration, along with family staying with us for the weekend! It was crazy busy, but we made so many new memories! I love times like those!
Since we just ate our first garden tomatoes today, I had to share this amazing tomato recipe with you!
Have you all tried pretzel rolls yet? They are my latest obsession since I'm such a huge pretzel lover! I had some leftover rolls, along with some tomatoes from my trip to Trader Joes, so I decided to whip up some of this fantastic bruschetta! I have to say, it's up there in my favorites. What's not to love with tomatoes, garlic and basil?? Enjoy!
Tomato Basil Pretzel Roll Bruschetta (click here to print recipe)
2 servings
What you need:
1- 4.5 ounce soft pretzel roll stick or french bread, sliced
olive oil
1 cup mini heirloom tomatoes, chopped
1 tablespoon olive oil
1 clove garlic, minced
1 tablespoon fresh basil, chopped
1/2 teaspoon balsamic vinegar
salt and pepper
Directions:
Preheat oven to 400 degrees. Brush the sliced bread with olive oil and place on a cookie sheet. Bake for 10 minutes. Remove from oven and set aside.
Meanwhile, combine the tomatoes, olive oil, garlic, basil and balsamic. Add salt and pepper as needed.
Top the toasts with the tomato mixture and serve immediately.
