Tomato and Spinach Balsamic Orzo Recipe
It's no secret. My nine year old, Ella is a super picky eater. Even though she's picky, I can't complain a whole lot. She dislikes pizza, chips and other foods that kids usually love, and loves fruits, veggies, salads and pastas. Dinner is a struggle, so we decided to get in the kitchen and start cooking together.
Ella picked out most of the ingredients for this recipe because orzo, tomatoes and spinach are some of her favorites. I added in the garlic and balsamic, because they are my favorites! The recipe came together quickly and ended up being delicious! Score!
She absolutely loved how it turned out, and I felt a mission accomplished moment because she helped pick out the ingredients, cook and enjoyed every bite! Plus we got to spend some awesome Mama and daughter time together which is priceless!

Tomato and Spinach Balsamic Orzo

Ingredients
- 3/4 cup orzo pasta
- 3 tablespoons olive oil
- 2-3 cloves garlic, minced
- 1 cup baby spinach
- 2 cups baby heirloom tomatoes, halved
- 1 1/2 tablespoons balsamic vinegar
- salt and pepper, to taste
- shredded parmesan cheese, for topping
Instructions
Cook orzo pasta according to package directions, Drain and rinse, set aside.
In a large skillet, heat olive oil over medium heat. Add garlic, saute two minutes.
Add spinach and tomatoes, saute for another 2-3 minutes. Stir in balsamic, salt and pepper, then toss in orzo pasta. Combine and serve topped with shredded parmesan cheese.
