This recipe is another childhood favorite of mine.
Boxed macaroni and cheese was something we never had in the pantry at our house. Instead, my Mom always made what we called "cheese spaghetti".
In fact, we had cheese spaghetti, short spaghetti which is the same as goulash and long spaghetti. These names for our pastas we used by my family, aunts, uncles and cousins.
As I got older, I knew we were one special bunch with our pasta nicknames!
I make this often at the request of my daughter. She loves it now, just as much as I did when I was a child.
It's just as quick as the stuff in the box and the flavor is so much better.

This is an amazing side for any meal including chicken, fish, beef or pork and you can really customize and make it your own.
We just love it as is, but try adding some sautéed peppers, mushrooms and onions. Or add some shredded chicken breast, steamed broccoli, fresh or dried herbs such as basil, rosemary or parsley.
Some truffle oil or salt would add an amazing flavor along with mushrooms. You can also cook the pasta ahead of time, cutting down on cooking time that day.
We usually make extra and reheat for lunches or a quick dinner during the busy weekdays.
It's budget friendly, kid friendly and SO good!

Stovetop Velveeta Macaroni and Cheese
Yield: 4 servings
ingredients:
- 3 cups elbow macaroni pasta
- 10 ounces Velveeta cheese, cut into small cubes
- 2 cups milk
- salt and pepper, to taste
instructions:
- Cook pasta al dente according to package directions.
- In a large saucepan, add cooked pasta, Velveeta, milk, salt and pepper. Heat over medium heat until cheese is melted.
- Remove from heat and serve.
NOTES:
Sauce will be thin, but thickens once the mac and cheese starts to cool.
