Save Money Good Food Recipes - Chicken curry with pilaf Rice. You'll save money making this dish by using bone in meat , and by picking up your spices from an Indian shop. Any leftovers can be heated up the next day with a tin of chickpeas and a good fistful of spinach to reinvent it as a semi-veggie curry.

INGREDIENTS;
- 15ml vegetable oil
- 2 onions , peeled and diced
- 4 cloves of garlic , peeled and minced
- 15g fresh coriander , stalks and leaves separated
- Knob of ginger , peeled and minced
- ½ tsp turmeric
- 2tsp garam masala
- 1 green chilli , whole but slit
- 800g chicken thighs , bone in , skin off
- 400g chopped tomatoes
- 150ml chicken stock
INSTRUCTIONS;
- Heat the oil in a large saucepan. Add the onions and cook for about 5 minutes or until completely soft. Add the garlic , chopped coriander stalks and the ginger and continue to cook for 2 more minutes.
- Sprinkle in the spices , and add the slit chilli and again fry for 1 minute.
- Drop in the chicken thighs and turn them in the already frying mix ensuring they’re well coated in the already cooking ingredients.
- Pour in the tomatoes along with 200ml chicken stock then bring to the boil and simmer for about 40 minutes or until the chicken is cooked through and tender.
- Finely chop the remaining coriander leaves and stir through.
