Pineapple Sweet and Sour Chicken
Yield: 4 servings
ingredients:
- 1/4 cup olive oil
- 2 chicken breasts, thinly sliced
- 3 tablespoons all purpose flour
- 3 tablespoons cornstarch
- 1/2 cup celery, thinly sliced
- 1/2 cup carrots, shredded or matchstick cut
- 1/2 cup white onion, finely diced
- 3 cloves garlic, minced
- 1- 8 ounce can pineapple tidbits, drained and reserve juice for sauce
- 3 tablespoons light brown sugar
- 2 tablespoons white wine vinegar
- 1 tablespoon soy sauce
- 1 tablespoon ketchup
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- cooked white rice
- sliced green onions, optional for garnish
instructions:
- Place chicken, flour, cornstarch, salt and pepper, in a ziploc bag, and shake until chicken is evenly coated.
- In a large non stick skillet, heat olive oil over medium high heat.
- Add coated chicken, and cook until it starts turning brown on each side and is almost cooked through.
- Add celery, carrot, onion, garlic and pineapple. Saute for about 5 minutes or until veggies start to soften.
- Combine pineapple juice, brown sugar, vinegar, soy sauce and ketchup in a bowl and stir until mixed. Set aside.
- Reduce heat to medium. Add the sauce to the chicken and veggie mixture and continue to cook until it thickens, about 2-3 minutes. Remove from heat.
- Serve over white rice and garnish with green onion.
