Wednesday's almost over? Whew! This is another week that's flown by!
Miss Ella is enjoying her 2nd week of 2nd grade. I think her most favorite thing about this year so far is Spanish class. I love that they start teaching them early.
She's currently reading the first Diary of a Wimpy kid book and I love hearing her giggles as she goes through the pages. This is such a fun age.
I'm an avid reader, so seeing my daughter enjoy books as much as I do is super exciting. We enjoy reading time on the couch together every weekday evening and then I go read some more when I lay down for bed every night.
Some of my favorite authors are Jodi Picoult, Diane Chamberlain and Jenna Blum!

Today's recipe is another perfect one for busy school nights!
I grew up eating these sloppy joes. They have a great homemade BBQ type sauce and every time I make them, it's a great reminder of the delicious, home cooked food my Mom always made for us.
My daughter requests them on a regular basis and we love the leftovers for lunch the next day.
You can customize this recipe by adding diced green bell pepper or jalapeƱos, different flavored tater tots or adding shredded sharp cheddar cheese!
The possibilities are endless and any way you make them, they taste delicious!

Mom's Sloppy Joes
Yield: 6 servings
ingredients:
- 3/4 pound lean ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 3/4 cup ketchup
- 1 1/2 tablespoons yellow mustard
- 2 1/2 tablespoons light brown sugar
- salt and pepper, to taste
- 6 buns
instructions:
- In a large skillet, cook the ground beef, onions and garlic until ground beef is cooked through.
- Add the ketchup, mustard and brown sugar and stir to combine. Simmer for 5 minutes on low. Season with salt and pepper, as needed.
- Remove from heat, scoop meat into buns and serve!
