December 1st... already?
It really doesn't seem like it at all. The weather in Minnesota has been in the 30's and 40's since last week, and we've pretty much been getting rain and sleet instead of snow. We did have a snowstorm a couple weeks ago, but that snow is long gone.
Even though it's not cold, I've been in a baking mood! My sister stopped by and baked a couple different kinds of scones earlier this week, and I baked up a batch of these delicious shortbread cookies!
Shortbread has always been a favorite of mine. I loved Girl Scout Shortbread cookies, when everyone else loved Caramel Delites and Thin Mints.
These amazing Brown Sugar Chocolate Chip Walnut Shortbread are slightly sweet, with delicious bits of chocolate and nuts. Perfect for snacking, like we did, or for a cookie exchange!
I brought them to work, and everyone loved them! My co-worker said they tasted like her favorite butter cookies from back home in Chicago when she was a kid.
They do have alot of butter though, I can't even lie. That's what makes a shortbread so darn good!
I'm going to try my hardest to bake something every Sunday, even though I'm not much of a baker. I'm hoping to do more cookies, bars and maybe even a cake or two. I love that I can bring the extras to work, so we don't have to eat them all at home!

Brown Sugar Chocolate Chip Walnut Shortbread Cookies

Ingredients (2 dozen)
- 2 cups all purpose flour
- 1/4 teaspoon salt
- 1 cup unsalted butter, at room temp
- 1 cup packed light brown sugar
- 1 egg yolk
- 2 teaspoons pure vanilla extract
- 3/4 cup mini chocolate chips
- 1/2 cup chopped walnuts
- granulated sugar, for rolling
Instructions
Pre-heat oven to 350 degrees. Line cookie sheets with parchment paper. Pour granulated sugar onto a small plate.
In a medium bowl, combine flour and salt.
In a large bowl, beat butter and brown sugar with an electric mixer until fluffy. Beat in egg yolk and vanilla. Add flour mixture and beat until smooth. Stir in chocolate chips and walnuts.
Using a medium cookie scoop, scoop dough into balls. Roll in sugar and place sugared cookies onto baking sheets about 2 inches apart.
Using the palm of your hand, press down lightly on top of each cookie to flatten into a disk.
Bake for 15-17 minutes or until light golden brown and firm to touch. Cool on the pan for a few minutes, then transfer to cooling rack. Store in an airtight container.
