Beefy Orzo and Vegetable Soup Recipe
Old fashioned comfort food and super easy to make! Great for any cool weather meal!
Cabbage Roll Casserole for dinner tonight! Fall is truly my favorite time of year and I always get excited when the leaves start changing colors and the temps start dropping.
Today's recipe is ultimate comfort food. My Mom always made "hamburger soup" when I was a kid. It was a favorite then, and still is a favorite now! My awesome food blogger friend, Janelle from Num's the Word and I had a conversation not too long ago about hamburger. We both grew up calling ground beef, hamburger but so many other people swear that hamburger is the meat shaped like a patty and not ground up meat. It really is a great debate and since I've become a food blogger, I always call it ground beef in my recipes so I don't cause any confusion! ;)
Anyway... this recipe is hearty, delicious and of course like most of my recipes, easy to make! I love throwing any veggies on hand in the pot, whether it's fresh, frozen or canned. It's also great with any rice or pasta. I just happen to have a slight obsession with orzo right now, so that got tossed in the pot too! Serve with some crusty bread or toast and you have a delicious fall or winter meal!
So readers... what do you call it? Hamburger or ground beef?
Beefy Orzo and Vegetable Soup

Ingredients (6 servings)
- 1 pound lean ground beef
- 1 medium sized onion, diced
- 1/2 teaspoon dried basil
- 1 cup carrots, sliced
- 1 cup frozen peas
- 1 cup frozen corn
- 1- 14.5 ounce can diced tomatoes
- 6 cups beef broth
- 1/2 cup orzo pasta
- 1- 15.5 ounce can butter beans, drained and rinsed
- salt and pepper, if needed
Instructions
In a soup pot, brown ground beef and onions until ground beef is no longer pink.
Add basil, carrots, peas, and corn, cook for 3-5 minutes. Add diced tomatoes and broth, bring to a boil.
Add orzo and butter beans, then simmer for for 10 minutes, until orzo is cooked through. Season with salt and pepper if desired.
