Amazing Rhubarb Cobbler Recipe
This lovely springtime dessert couldn't be any easier! Ready in less than an hour and so good with the sweet and tangy flavors!

I had a wonderful Mother's Day this year! I spent some time in the kitchen with my daughter, Ella and made this tasty Rhubarb Cobbler!
We also made a delicious vanilla pudding for her blog, Stuff I Fancy, which will hopefully be posted sometime this week!

I posted the recipe for Sticky Rhubarb Pudding last month, but when you live in MN and love rhubarb like I do, then you have to post about four or five different rhubarb recipes each season!
This recipe turned out to be similar to the pudding, but uses different ingredients. I decided to still post it anyway because I can never pass up a recipe that turns out as wonderful as this!
Ella helped me with every step of the recipe and she absolutely loved it! 😍
I have to say I loved it too and it will be made again at our house! I can't wait to bring it to work tomorrow and share it with everyone there!

I'm not much of a baker or dessert maker, unless it comes to rhubarb. I really want to try some others now that I know how great they are.
We always have fruit in the house because we are fruit fanatics, but we usually just eat them as a snack or with lunch.
I try to stay away from desserts as much as possible since starting my weight loss journey!
We joined the YMCA in January and as of today, I've lost 20 pounds! I've been working out at least 5 days a week and really love it. Here's to the next 20! 👌

Amazing Rhubarb Cobbler

Ingredients (4-6 servings)
- 1 stick butter (1/2 cup)
- 1 cup flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 cup milk
- 2 cups rhubarb pieces (1/4" pieces)
- 1 cup hot water
- 1 cup sugar
- cinnamon
Instructions
Preheat the oven to 350 degrees.
Melt the butter in a 9 inch glass baking dish.
In a medium bowl, combine the flour, 1/2 cup sugar, baking powder, and milk until it reaches a batter consistency. Spoon over melted margarine.
Sprinkle rhubarb over the batter.
Stir 1 cup sugar into the hot water until dissolved. Pour over rhubarb and sprinkle with cinnamon.
Bake for 40 minutes and remove from oven. Cool completely before serving.
