Watermelon Mint Mojito Recipe
A refreshing adult summer beverage perfect for any occasion including ladies night, BBQ's and date night!
It's finally starting to feel like summer in Minnesota! Woo-hoo! What makes me the most excited about this time of year is all the amazing fresh fruit at the grocery store!
I'm a HUGE cherry lover and they've already been on sale the last couple weeks! Score! Today's recipe is using another summertime fruit, watermelon! My sister Shantel and I are obsessed with mojitos! Whenever we get together for dinner, she always is in charge of whipping up some for us to sip on while we cook and chat. Mango, guava and strawberry are a few flavors we've made recently but this watermelon one really tops the list!
The watermelon and mint taste fantastic together and the whole drink just screams summertime! It's easy to whip up a pitcher for a BBQ or ladies night, or just make a couple for an at home date night while watching movies or sitting outside enjoying the stars. I actually made this recipe late last summer and saved it for posting until now! Watermelon was going out of season by the time I had some openings in the blogging schedule so I saved all this goodness for now!

Watermelon Mint Mojito

Ingredients (1 mojito)
- 6 fresh mint leaves
- 2 teaspoons sugar
- 1 1/2 ounces rum
- 1/4 cup watermelon puree
- juice from 1/2 lime
- 1/2 cup club soda
- ice
Instructions
Puree cut up watermelon in a blender until smooth.
Muddle the mint leaves in the bottom of your glass. Add ice.
