I'm gonna be honest with you. I'm not a huge fan of traditional coleslaw recipes, but I absolutely love cabbage.
My dad grew a huge garden every year throughout my childhood, so my love of vegetables stems from eating all those fresh veggies.
We lived in central Minnesota and the soil must've been magic, or my dad had the magic touch. His garden was always producing massive amounts of produce and I loved picking and eating everything.
I decided to try this variation of coleslaw for something new and I absolutely loved it. In fact, I recently shared the batch I made with co-workers and they loved it too!
It's so fresh, easy to make when using bagged coleslaw mix and it's so flavorful.
Mexican and southwest inspired foods are a favorite of mine, so this recipe fit right in with a lot of foods I usually make for lunch and dinner.
It's also great in wraps for a quick weekday lunch and you could even add some crushed Doritos on top for an even bigger crunch and some extra flavor.

What is in Southwest Chicken Coleslaw?
- Fresh tomatoes: They are technically a fruit since they have seeds, but are prepared or served as a vegetable in savory dishes. They contain lycopene, which has great health benefits, vitamin c, potassium and folate. They are served fresh or cooked and can be roasted, canned, dehydrated or frozen for use later.
- Chicken: I love using leftover chicken in pretty much everything, soups, casseroles, sandwiches and more! I sometimes cook chicken breast in the slow cooker to use for meals, or buy my rotisserie chickens at Sam's Club to use instead.
- Cabbage: Cabbage is a leafy green, red, or white plant grown as an annual vegetable crop. It has vitamin C, vitamin K, is high in fiber and antioxidants. Cabbage can be eaten raw, steamed, boiled, roasted, sautéed, or stuffed.
- Cumin: Part of the parsley family and native to southwestern Asia including the Middle East. The dried seeds are used as a spice, especially ground and can be found in Mexican recipes or curry powder.

This recipe is ready in these steps:
- In a bowl, add the chicken, coleslaw, cheese and tomatoes
- In a bowl, mix together lime juice, ranch, chili powder, cumin, pepper and sugar
- Pour over top coleslaw mix, and stir to combine
- Refrigerate for at least one hour prior to serving

Southwest Chicken Coleslaw
Yield: 6-8 servings
ingredients:
- 2 cups cooked chicken, chopped
- 2 cups coleslaw mix
- 1/2 cup shredded cheddar cheese
- 1 cup grape or cherry tomatoes, quartered
- 1 1/2 tablespoons fresh lime juice
- 1/2 cup buttermilk ranch dressing
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/4 teaspoon black pepper
- 1/2 teaspoon sugar
instructions:
- In a large bowl, add the chicken, coleslaw, cheese and tomatoes.
- In a smaller bowl, mix together lime juice, ranch, chili powder, cumin, pepper and sugar until combined.
- Pour over top coleslaw mix, and stir to combine. Refrigerate for at least one hour prior to serving.
- Also great served on a spinach or tomato tortilla as a wrap.
