It's back to school at our house today! My daughter is starting 4th grade and I'm shaking my head wondering where did the time go? We've spent the last week washing her uniforms and planning lunches!
I want to do something extra special for my daughter on her first day today so I'll be making this easy Italian meal for dinner tonight!
Life is extra busy for us right now. I just started an Americorps VISTA position at a local non-profit last week, and in addition to blogging and being a Mom, there's not much time left for cooking some days.
That's where today's post and recipe comes in handy!
I'm sharing an amazing Mini Tortellini Kabob recipe that uses BUITONI® Cheese Tortellini, along with STOUFFER'S® Family Size Lasagna Italiano and TOMBSTONE® Roadhouse Pizza for a family Italian night meal!
These three Nestlé products allow me to take shortcuts in the kitchen, combining homemade and convenient food options for a balanced, fabulous dinner.
In addition to dinner, the tortellini kabobs would also be great as an appetizer for a party. It's so easy to add and combine different ingredients for a more personalized flavor. You can also pack them in your kiddos lunch for school! They fit in a lunch box perfectly!
The vinaigrette for the kabobs was a huge hit with myself, my boyfriend and my daughter. The lemon, basil and garlic flavors go great with each other and they tasted fabulous on the Mini Tortellini Kabobs!
If you double the recipe for the kabob vinaigrette, you can add a salad to the menu and use the vinaigrette for that too! The vinaigrette keeps in the fridge for 5-7 days, so make it over the weekend and store until using.
Also, if you chop your lettuce ahead of time and store in an airtight container or use spinach, all you have to do is throw it in a bowl with some tomatoes and croutons and within minutes your salad is ready.
Balancing work and family life can sometimes be challenging. You can still provide those quality, healthier meal solutions while accomplishing everything else and spending the much needed time with your family!

Mini Tortellini Kabobs with Lemon Basil Vinaigrette

Ingredients (20 Kabobs)
- 20 tortellini, cooked according to package directions
- 20 green olives
- 20 grape tomatoes
- 20 sharp cheddar cheese cubes
- 20 kabob skewers, halved (use the half with the sharp tip)
- Vinaigrette:
- 3 tablespoons freshly squeezed lemon juice
- 1 tablespoon fresh basil, chopped
- 1 clove garlic, minced
- 1 tablespoon white wine vinegar
- 2 tablespoons olive oil
- 1/4 teaspoon sugar or honey
- salt and pepper, as needed
Instructions
Assemble kabobs by putting one of each of the green olives, tortellini, tomato and cheese cube on the skewer.
In a bowl, whisk together all of the dressing ingredients.
Refrigerate both the skewers and dressing in airtight containers until serving.
When serving, arrange kabobs on a serving platter, Drizzle vinaigrette over top of the skewers.
