Honey Roasted Rainbow Carrots and Potatoes Recipe
A fun and tasty side that goes with any meal! Also great on the grill in a foil pack!
How many of you have tried rainbow carrots before? I LOVE them! There's just something exciting about eating carrots that are other colors besides orange! It may just be the dorky foodie in me, but they are so fun! I bought some at Trader Joes, and most recently received a bag of them in my fruit and vegetable basket from Bountiful Baskets! If you haven't heard of Bountiful Baskets, you should really check out their website and see if they have pick up sites in your area! You pay a basket contribution fee and on pick up day, you receive your basket with 50% fruits and 50% veggies! It's so awesome!
The recipe I created with the rainbow carrots is full of flavor and is total comfort food! I just love oven roasted veggies and my daughter loves them even more than I do! It's one of our favorite go to sides to serve with chicken, fish or even steak! The honey adds a touch of sweetness and almost caramelizes on the veggies while they're roasting! Totally delicious and so simple! You can also add any other veggies you have on hand and make a larger batch! The leftovers are tasty too! Enjoy!
Honey Roasted Rainbow Carrots and Potatoes
by Ingredients (4 servings)
Instructions
Preheat oven to 400 degrees.
Combine carrots, potatoes and garlic in a glass baking dish.
Heat honey and olive oil in a microwave for 15 seconds, then stir in the parsley, salt and pepper.
Pour over veggies and toss to coat. Bake for 50-60 minutes, until veggies are tender and start to brown, stirring every 20 minutes.
