Homemade Egg McMuffins are one of my favorite breakfasts!
I try to avoid spending extra money and eating out, even if it's just a few dollars. The egg mcmuffins are fast and easy to make at home and everyone just loves them!
They're great for dinner too, especially if you're a breakfast for dinner kind of person like me. I love breakfast any time of day and since they're so simple to make, they make a great dinner on those busy weeknights when there's alot going on.
I was super excited when I saw this recipe idea floating around on Pinterest.

This casserole turned out wonderful!! I'm a total sweet and savory junkie, so I ate mine drizzled with maple syrup. You could totally skip the syrup if it's not your thing.
This casserole is the perfect breakfast recipe for a big family, potluck, brunch or holiday since it feeds up to 8 people. If there are only a few of you, just cut the recipe in half and bake in a smaller baking dish.

What is in Egg McMuffin Breakfast Casserole?
- Milk: Cow's milk is a great source of calcium, vitamin D, potassium and it's a complete protein source too!
- English Muffins: Also known as breakfast muffins they first originated in the United Kingdom. They're usually sliced horizontally, toasted and buttered. My favorite brand is Bay's! You can find them in the dairy or refrigerated section of your grocery store.
- Canadian Bacon: Very similar to ham and also called back bacon. It can include pork loin and pork belly and is cured and smoked.

- Hashbrown and Egg Breakfast Bake
- Pumpkin French Toast Casserole
- Spinach, Sausage and Tomato Egg Bake

This recipe is ready in these steps:
- Preheat the oven
- Grease a glass baking dish
- Layer the baking dish with half of the English muffins, half the bacon, and half the cheese
- Layer again with the remaining muffins, bacon and cheese
- In a bowl, whisk together the eggs, milk, salt and pepper
- Pour egg and milk mixture evenly over the casserole
- Bake and serve drizzled with maple syrup, if desired

Egg McMuffin Breakfast Casserole
Yield: 6-8 servings
ingredients:
- 8 English muffins, split and cut into bite sized pieces
- 12 ounces Canadian bacon, cut into bite sized pieces
- 2 cups shredded cheddar cheese
- 9 large eggs
- 1 3/4 cups milk
- salt and pepper, as desired
instructions:
- Preheat oven to 350 degrees.
- Grease a 9x13 glass baking dish.
- Layer the bottom of the baking dish with half of the English muffins, half the Canadian bacon, and half the cheese.
- Layer again with the remaining muffins, bacon and cheese.
- In a bowl, whisk together the eggs, milk, salt and pepper.
- Pour egg and milk mixture evenly over the casserole.
- Bake for 45 minutes. Serve drizzled with maple syrup.
